Ingredients

Supplies

  • Deep pot for rendering

  • Fine strainer or cheesecloth

  • Glass jars for storage

Instructions

  1. Chop suet into small pieces.

  2. Place in a pot over low heat and melt slowly, stirring occasionally.

  3. Once fully rendered, strain the liquid tallow through a strainer or cheese cloth into jars.

A one-skillet dish made with beef, eggs, squash, and raw cheeseβ€”Sunday brunch, animal-based style. 

Ingredients

  • 1 squash, peeled and cubed

  • 1 lb ground beef paleo blend (White Oak Pastures β€” use code: BAE10)

  • 6 eggs

  • Tallow or animal fat for the skillet

  • Β½ tsp salt 

  • Raw GruyΓ¨re cheese, shredded

Instructions

  1. Brown squash in tallow.

  2. Add ground beef and cook thoroughly.

  3. Beat eggs with cheese and salt in a separate bowl.

  4. Combine everything in the skillet and bake at 375Β°F for 25 minutes.

  5. Let cool slightly before slicing.


3. Crunchy Chicken Nuggets with Lemon Mayo Dip

Family-friendly, seed-oil-free, and crispy on the outsideβ€”tender on the inside. 

For the Nuggets

  • 1 lb ground chicken ( I source mine from Miller’s Bio Farm β€” use code: BAE)

  • 1 egg

  • 1 cup shredded Parmesan

  • Β½ cup crushed pork rinds

  • Β½ tsp salt

For the Dip

  • Juice of Β½ lemon

  • 2 egg yolks

  • Β½ cup plain yogurt

  • ΒΌ tsp salt

Instructions

  1. Mix nugget ingredients and form into small nuggets.

  2. Bake at 375Β°F for 15–20 minutes until golden.

  3. Whisk dip ingredients until smooth.

  4. Serve hot with lemon mayo.

4. Hearty Carnivore Chili

A slow-cooked, bean-free, nightshade-free chili made for cozy days and batch cooking.

Ingredients

(all meats sourced from Shirttail Creek Farm - use code: BAE10)

  • 1 package bacon (chopped) or pork bits

  • Β½ lb chuck roast, cubed

  • Β½ lb ground beef

  • Optional: beef heart (cubed or chopped)

  • 2 cups water

Instructions

  1. In a Dutch oven or slow cooker (used on the stovetop), cook the chopped bacon or pork bits over medium-high heat until crispy. Remove and set aside, reserving the fat in the pot.

  2. Brown the cubed chuck roast and ground beef in the bacon fat.

  3. If using beef heart, add it after the meat has cooked for about 3 minutes.

  4. After about 5 minutes total of browning, add the water.

  5. Cover and simmer on low in the slow cooker for 4 hours.

  6. Serve as-is, or top with avocado, pork rinds, or raw cheese.

5. 2-Ingredient Animal-Based Pancakes

Fluffy, protein-packed, and toddler-approvedβ€”no flour, no filler. 

Ingredients

  • 1 banana

  • 2 eggs

Instructions

  1. Blend banana and eggs until smooth.

  2. Pour into a greased skillet and cook like pancakes.

6. Blueberry Feta Burgers

Sweet + salty = a surprisingly delicious burger combo.

Ingredients

  • Β½ cup blueberries, halved

  • Β½ cup feta cheese, crumbled

Instructions

  1. Mix all ingredients thoroughly.

  2. Form into burger patties.

  3. Grill or pan-fry to desired doneness.

7. Lemon Honey Chicken Legs

A sweet-and-savory dish that’s juicy, flavorful, and simple. 

Ingredients

  • 1 tbsp honey

  • Juice of Β½ lemon

  • 2 tbsp butter

  • Salt, to taste

Instructions

  1. Marinate chicken legs overnight with lemon juice and salt.

  2. Heat butter in a pan over medium heat. Add chicken and cover. Cook for 6 minutes per side.

  3. Uncover and sear on high until the skin is crispy.

  4. Remove from the pan, toss with honey, and serve warm.


8. Homemade Bone Broth

Ingredients (makes 6–8 quarts)

  • 4 lbs of soup bones (include at least 2 knuckle bones and I source mine from Northstar Bison β€” use code: BAE10)

  • 2 gallons of filtered water

  • 4 tbsp apple cider vinegar

  • Salt, to taste

Instructions

  1. Preheat the oven to 350Β°F. Roast salted bones for 30 minutes.

  2. Transfer bones to a stockpot with water and vinegar. Let it sit for 1 hour.

  3. Bring to a boil, then simmer on low.

  4. Skim foam in the first 2 hours.

  5. Add salt. Simmer for 48 hours, topping off with water as needed.

  6. Cool, strain, and store in the fridge (up to 10 days) or freezer for longer.

Instructions
